None of us really have time in the morning to sit down and eat a good breakfast, but here’s a good idea for making a week’s worth of breakfasts on the fly with simple ingredients. This recipe is for FOUR Breakfast Burros and uses Cheddar cheese, chopped onion, chopped green pepper, salsa and Canadian Bacon. You can substitute or leave those out all together. You can also use a spray like PAM instead of Olive Oil.

What you’ll need:
12 EGGS
4 teaspoons of OLIVE OIL
4 LARGE TORTILLA SHELL (burrito size)
4 teaspoons of OLIVE OIL
4 ounces of CHEDDAR CHEESE (Optional)
1 Slice of CANADIAN BACON (Optional)
1 small ONION (Optional)
1/4 of a GREEN BELL PEPPER (Optional)
4 tablespoons of SALSA (Optional)

Watch for and avoid trans fatty acids, hydrogentated oils, and refined sugars. To know EXACTLY what you’re eating, it’s cheap and easy to make your own peanut (or cashew or any nut) butter.

Peanut Butter Banana Roll-Ups

1 Flour tortilla or pita
1 tbsp Peanut butter
1 tsp Honey
1 Banana

Spread peanut butter onto tortilla. Slice banana and place on peanut butter. Drizzle honey over top. Roll up and eat.

Yield: 1 serving

329 calories, 8g Protein, 54g Carbohydrates

So a major peanut processor gets shut down after a salmonella scare makes us all a little jittery about peanuts and peanut products.
If that’s not enough, you need to be a little weirded out by the whole manufacturing process that takes a great natural ingredient -- nuts -- and mixes them with oil that’s been infused with hydrogen (hydrogenated oil) to make sure it stays longer in your cupboard without going rancid, mono- and di-glycerides to make it spread easier and who knows what other bits and pieces of organic (read: insect and rodent scale) matter.

Make your own! It’s easy, takes less than 5 minutes,is cheap and gives you something you actually know the contents of.

Here’s all it takes:
•	About 1 pound of roasted peanuts
•	1 tsp of kosher salt (or sea salt)
•	1.5 tsp of honey or molasses to taste
•	1.5 Tsp of peanut oil

Don’t be dainty, drop all the nuts, the honey and the salt into a food processor and grind away for about a minute or so.

Pause and scrape down the sides of the processor so all the dry materials are on the bottom. Add a little of the oil and go at it again, adding small amounts of the oil until the mixture is smooth. It should take about 2 more minutes. Place it in an airtight container and toss it in the fridge. You can nuke it for a few seconds to make it easier to spread.

Your PB could last up to two months ... if you can resist it.
