None of us really have time in the morning to sit down and eat a good breakfast, but here’s a good idea for making a week’s worth of breakfasts on the fly with simple ingredients. This recipe is for FOUR Breakfast Burros and uses Cheddar cheese, chopped onion, chopped green pepper, salsa and Canadian Bacon. You can substitute or leave those out all together. You can also use a spray like PAM instead of Olive Oil.
What you’ll need:
12 EGGS
4 teaspoons of OLIVE OIL
4 LARGE TORTILLA SHELL (burrito size)
4 teaspoons of OLIVE OIL
4 ounces of CHEDDAR CHEESE (Optional)
1 Slice of CANADIAN BACON (Optional)
1 small ONION (Optional)
1/4 of a GREEN BELL PEPPER (Optional)
4 tablespoons of SALSA (Optional)
Breakfast Burros on the Fly

Chop onion, green pepper, Canadian bacon.
Grate cheese.
Separate eight egg whites and add to four whole eggs. Beat smooth.
In a skillet, over low heat, saute onion and pepper in olive oil or PAM until tender. Add Canadian bacon until warm.
Pour in the egg mixture and scramble. When firm, remove from heat.
On a tortilla, spread 1/4 of your cheese, add 1/4 of your skillet, some salsa and roll it up, making sure to fold up one end to make a pocket at the “bottom” of the burro. Wrap in plastic wrap and freeze.
When you’re ready, pop it in the microwave and nuke to create a portable, healthy and tasty breakfast!
